2 10-ounce boxes frozen chopped cauliflower
Defrost the cauliflower. (I have even done this with it frozen.)
Combine the cauliflower, eggs, mayonnaise, and onion soup mix.
Spray the bottom and sides of an 8" or 9" baking pan with oil.
Cover the bottom and sides with the corn flake crumbs. Pour in the cauliflower mixture.
Cover the top with a layer of corn flake crumbs.
Bake for 45 minutes or until kugel is set in a 350°F oven. Serve warm.
To reheat, do not defrost. Take it from the freezer to a hot oven.

I have made this recipe with frozen broccoli as well. Freezes well.
