1/2 cup thick applesauce, unsweetened
Mix applesauce, brown sugar, molasses, and sweetener. Beat in egg whites and water. Add vanilla.
Mix the flour, baking powder, baking soda, and salt. Add flour mixture to the creamed mixture and mix just until moistened. Mix in the carrots.
Spoon into baking dish (about 8"x12") which has been sprayed with cooking spray. Bake at 350°F for 30 to 40 minutes or until a toothpick inserted in the center comes out dry.
Freezes well.

1 tablespoon molasses

1/3 cup water, or juice
1 teaspoon vanilla
2 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt, or less
4 cups carrots, shredded
I adapted this from the high fat recipe I used to use, also subbing some Splenda for part of the sugar. It is a little heavy, but very tasty.
