Broccoli Kugel au Gratin (P, TNT)

Serves: 6

1 32-oz. package frozen broccoli cuts, cooked, cooled and drained
3 eggs, lightly beaten
1/4 cup oil
1-1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/4 tsp. baking powder
1 small to medium onion, grated and drained
1-1/2 cups soft bread crumbs
Paprika, to taste

Combine the broccoli and the lightly beaten eggs. Add the oil, salt, pepper, garlic powder, onion powder, and baking powder and mix well.

Fold in the grated onion and 1 cup of the bread crumbs. Place in 3 small sprayed pans or one 9"x13" pan and sprinkle the top with the remaining bread crumbs and paprika.

Bake for 45 minutes to 1 hour in a 350°F oven.

Poster's Notes:
Use 3 extra large eggs or 4 large eggs. Soft, leftover challah makes excellent bread crumbs in a food processor for this recipe!
