2 packages of frozen, defrosted vegetables (either 2 chopped broccoli or 1 each broccoli and spinach)
Beat the egg whites.
While that is whipping, whisk together the egg and mayonnaise until nice and smooth. Add the onions and soup powder, then add the vegetables. fold in the egg whites.
Gently pour into greased baking dish (1-1/2 to 2-quart). Bake at 350°F for 30 to 35 minutes.

I make a broccoli or spinach-broccoli kugel w/hardly any carbs and only some eggs.
