Broccoli Kugel, Asian (P, TNT)

1 32-ounce bag broccoli
4 eggs
2 tablespoons soy sauce
1/2 cup peanut butter

Defrost and chop the broccoli in the food processor.

Beat the peanut butter, eggs, and soy sauce well. Pour over broccoli and mix well

I used a round silicone baking pan and it popped out with a nice browned bottom.

Bake at 375°F for 1 hour 20 minutes.

Poster's Notes:
This past week I made up a new lower-carb broccoli kugel with less eggs than I normally use; it did not break apart and sliced beautifully. Everyone loved it--even my finicky niece!!
