3 quarts red plums
Wash plums and put into 5-6 quart pot with water. Cover and cook over low heat at simmering point until plums burst and juice flows freely. Shake pot frequently to prevent sticking.
Puree plums and juice together. This should give you approximately 9 cups puree.
Return puree to pot. Heat to simmering and add sugar and spices. Stir until well mixed. Heat to boiling and boil vigorously, stirring almost continuously until mixture gives jelly test-2 drops sheet from edge of metal spoon. About 20 minutes of cooking is required.
