4 quinces, scraped, peeled and thinly sliced in your food processor, (leave some seeds)
In a heavy saucepan put sugar, lemon, and 1/2 cup water. Stir. Bring to a boil and boil for few minutes until it become like syrup.
Add the sliced quince and toss the quince so they will be covered with the syrup. Cover and turn fire on low; simmer for 10 minutes. (You can add just very little water.)
Add water until it covers the quince. Add vanilla. Then add more water if you want more liquid.
Taste, and add more sugar (or sweetener) or lemon if it needs it.
Cool completely. Keep in refrigerator.
