Kumquats, Candied II (P, KLP, TNT)

Serves: About 8

1-1/2kg (3 lbs.) kumquats
1 liter (2 pints) water
500g (1 lb.) sugar

Cut kumquats in 4 (mine were so tiny, I just pricked them with a fork). Add them to a pot containing the water and sugar and cook for 1/2 an hour (since my fruits were whole, I cooked on low setting fire until translucent and shiny, about an hour.

Poster's Notes:
Serve plain or with other fruits cooked in compote, or even better with chocolate ice cream or sorbet.

A supreme delight, if you like bitter sweet chocolate, and don't forget: mint leaves for the color!
