Kumquats, Candied I (P, KLP, TNT)

Kumquats
Sugar
Water

Wash and prick the kumquats to try to keep them from collapsing (doesn't always work).

Boil the sugar and water together to make a syrup. Make sure the sugar is all dissolved and the syrup boiling. Add the kumquat to the syrup and cook until they are soft and translucent. Remove from stove and cool.

Poster's Notes:
Oh do you take me back with this recipe. My mother used to make a sweet kumquat dish to serve a condiment with meat dishes that was wonderful. I don't have a precise recipe, but will give you what I have.

I have tried this with sugar substitutes. The taste is fine, but the syrup stays juice and the kumquats don't get that lovely translucence and texture.
