Fritters, Apple II (D, TNT)
Source: Stephenson's Old Apple Farm Restaurant
Yield: about 40 fritters

1 cup milk
1 egg, beaten
4 tablespoons melted margarine
1/2 cup sugar
Juice and grated zest of 1 orange
1 cup chopped peeled apples
1 teaspoon vanilla
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
Vegetable oil for deep frying
Confectioners' sugar

Combine milk, beaten egg and melted margarine in a mixing bowl. Add sugar, orange juice, grated zest, apples and vanilla.

Stir together flour, baking powder and salt; stir dry mixture into milk mixture with a spoon, stirring until blended. Do not over mix.

Preheat oil in deep skillet or deep fryer, according to manufacturers' directions, to 350°F. Drop batter off end of spoon into hot oil. Fry until golden brown, turning to brown evenly. Remove and drain on paper towels. Allow to cool, then sprinkle with confectioners' sugar.
