Applesauce, Basic I (P, KLP, TNT)

1 (3-lb.) bag Macintosh Apples, cored, quartered with the skin on
1 cup water
1 cup sugar.
Tiny pinch of salt

I use a 3-quart pot. Slowly cook apples over medium heat until they are soft. It is my grandchildren's job to put the cooked apples through the Foley food mill.

Poster's Notes:
When the apples are young and tart, I may use a tiny bit more sugar. When the apples are older, I reduce the amount of the water and sugar. You can see that it is a 1/3 cup of water and 1/3 cup of sugar per pound.
