Apples, Baked w/Fire and Ice (D, KLP, TNT)
Source: Alisa Acton's "Modern Cookery" of 1849
Serves: 8

8 large apples, cored and peeled 1/3 from the top
1/4 cup sweet orange marmalade
8 ounces light brown sugar
1-1/4 cups sweet red wine

Fill the cavities of the apples with the marmalade. In a baking dish, make a bed of the light brown sugar and place the apples on top and pour the wine over.

Bake in a preheated 375°F oven for 40 to 45 minutes. Cool and if necessary reshape with a large spoon.

Baste with the pan juices and place a scoop of sherbet or ice cream on top of each apple. (Sometimes you can find apple sherbet or ice cream.)
