Oil (hot pepper oil was great, but any will do)
Toast the seeds either dry or in a little oil. You can remove them or just push to the side. Get the frying pan good and hot and add the oil.
Dry the surface of the tuna with paper towels. When the oil is hot, add the tuna. Put about half the sesame seeds on the raw side of the tuna when ready to flip. Less cooking is better, you want this seared, not fried. Flip and put rest of seeds on cooked side of tuna. Squirt a little soy sauce in the pan at some point (it will sizzle). When done, flip briefly to "set" the top sesame seeds.
Make a sauce with soy sauce and ginger. You can grate fresh or use the refrigerated stuff. Serve immediately with the sauce for dipping.

I just made up this recipe last night, based on a pricey entree from recent restaurant dining. It was delicious and very fast.
