Tuna 'N Rice Muffinlettes (P, TNT)

Serves: 6

2 cups cooked rice
1 cup shredded cheddar cheese
1 can tuna, (6-1/2 oz.) drained
3/4 cup black olives, sliced in thirds (optional)
1 tbsp. instant chopped onion
1 tbsp. parsley flakes
1 tsp. seasoned salt
2 eggs, beaten
2 tbsp. milk
Vegetable cooking spray

Combine rice, tuna, olives (if using), onion, parsley, and seasoned salt.  Stir in eggs and milk, mixing thoroughly.

Spray six muffin cups with vegetable spray. Divide rice mixture evenly among cups.

Bake in 375F oven 15 minutes or until lightly browned. Loosen with spatula and arrange on serving plate.
