Tuna, Ginger-Garlic Glaze (P, KLP, TNT)

Serves: 4

4 6-oz. Ahi tuna fillets
3 tablespoons honey
3 tablespoons sherry vinegar (I have used cider vinegar, since I couldn't find sherry vinegar)
1 teaspoon minced ginger
3 cloves of garlic, crushed
1-1/2 tablespoons olive oil
Salt and pepper

Mix the honey, vinegar, ginger and garlic. Pour over fish and let sit for 10 minutes. Turn fish over and let marinate another 10 minutes.

In a large nonstick pan heat the oil, remove the fish from the marinade, reserving marinade and fry for 6 minutes. Salt and pepper the tops to taste. Turn the fish and fry another 3 minutes.

Remove fish to a heated plate. Using the reserved marinade, deglaze the pan, making sure it comes to a boil and reduces a bit. Pour over the fillets and serve. The marinade can be strained before adding to the pan, but I love ginger and garlic, so I leave it in.
