1 can tuna in water; drained
Spray muffin tins with Pam.
Trim crusts off bread and fit slices into the cups. Mix remaining ingredients and fill the shells. Bake about 20 minutes at 400°F.
Easier, but less impressive, is to cut the bread slices in half, diagonally (without trimming the crusts), put them on a sprayed baking sheet, top with tuna mixture, and bake. (You'll probably need only four slices this way.)

2 tablespoons dry minced onion
1/4 cup low-fat mayonnaise
pepper and celery salt to taste
6 slices bread; white or whole wheat
I make this for a quick supper along with some soup and salad.
