1 lb. sole fillets, or any white fish
Combine onion and vegetables. Spread in a single layer over the bottom of a baking dish.
Place fillets on top of vegetables. Sprinkle with pepper and tarragon. Dot with margarine. Pour wine over fish.
Bake covered at 400°F for 15-20 minutes or until fish flakes with a fork. To serve, lift the fish and vegetables onto a serving platter, using a slotted spoon. Garnish with lemon wedges, if desired.
Serve with rice or pasta for a complete meal.

1 10-oz to 16-oz package frozen broccoli, cauliflower, and carrots

As for rolled-up fish, you might want to consider bread crumbs or mashed potatoes mixed with grated carrots, celery, etc., plus whatever spices/herbs you like, as a stuffing. Roll up and sit on a bed of rice. Then pour some white wine and garlic over and bake.
