Salmon Provencal (P, KLP, TNT)

4 portions skinless salmon fillets--slices about 1" thick each
1 can sliced mushrooms
2 chopped garlic cloves
1 small onion, chopped
1/2 cup sun-dried tomatoes, lightly chopped
2 tbsp. of the tomato oil
Salt to taste
Black pepper to taste
Fresh lemon juice to taste

Preheat oven to 400°F.

Mix all ingredients but the fish and place 1/3 on 9"x13" dish covered with foil sprayed with non-stick spray. Place fish on it and top with 2/3 of the mix.

Place in 400°F oven for 30 minutes.

Serve with lemon wedges and potato salad or rice.

I used a small convection oven.
