Make Manicotti and Assembly:
Stir in salmon and cooked broccoli. Fill manicotti with mixture.
Spray a 9"x13" baking dish with non-stick cooking spray. Cover the bottom of the dish with a small amount of sauce. Arrange the manicotti over it. Top with remaining sauce and sprinkle with Parmesan cheese.
Bake at 350°F for 30 to 35 minutes.

15-1/2 oz. can pink salmon
12 manicotti noodles (or jumbo shells), cooked
10-oz. package frozen chopped broccoli, cooked and drained (could use fresh instead, probably 8 to 10 oz.)
1/2 lb. 0.5%fat cottage cheese, or ricotta cheese
1 egg, slightly beaten
1/4 cup grated Parmesan cheese
2-1/2 tbsp. flour
1 tsp. dill, crumbled
1/2 tsp. salt
2 cups skim milk
2 tbsp. lemon juice
In a saucepan, over low-medium heat, blend flour and milk until smooth, add seasonings and cook, stirring constantly, until mixture thickens. Remove from heat and stir in lemon juice.
Drain salmon and mash. Combine cheese and egg in a bowl.
