Salmon w/Garlic and Cilantro (P, KLP, TNT)

8 pieces salmon fillet, skinned

2 tbsp. coriander/cilantro chopped or parsley
1/4 cup extra virgin olive oil
1/2 cup fresh lemon juice
4 garlic cloves crushed
Kosher salt
Black pepper

Pre-heat oven to 350°F.

Mix all of marinade ingredients together.

In a 9"x7"x2-1/2" Pyrex dish, pour in half of the marinade, place fish in and top with other half of marinade. Cover and refrigerate for 3 to 4 hours. Turn fish after 2 hours; don't break the fish.

Cook for 25 to 30 minutes. Do not over cook. Do not throw away the marinade. I cooked a second batch of salmon and some cod, It was good.

Poster's Notes:
For the marinade, I used parsley, don't like coriander.

For the lemon juice, I always have cubes fresh frozen.

To all salmon lovers, I received and tried this recipe and gave it a 10; very easy to prepare.
