1kg (2.2 lbs.) Nile perch
Lay the sliced peppers at the bottom of a microwave proof dish. Put the tomato slices in the peppers. Lay the Nile fish on top of the vegetables. Place the cilantro on top of the fish. Sprinkle with fresh garlic slices. Sprinkle with olive oil.
Cover with vented plastic wrap. Microwave on high for 15 minutes. Test if the fish is flaky. If so, it is done. If not microwave for another few minutes.
Serve the fish with the sliced peppers and tomatoes as decoration. Very tasty, easy and fast.

Garlic cloves (according to taste, I use lots), sliced
