Halibut, Baked (P, TNT)
Source: My sister-in-law in California
Serves: 2 (recipe may be multiplied)

2 (5 oz.) halibut fillets
Olive oil
Mayonnaise
Garlic powder
Fresh or dried chopped tarragon
Salt
Pepper
Bread crumbs plain or seasoned

Oil a Corningware dish with olive oil; brush fillets with olive oil. Salt and pepper the fillets.

To make the sauce, stir together mayonnaise, tarragon, salt, pepper and garlic powder.

Spread sauce mixture on the fish. Spoon bread crumbs over the fish. Bake in a 325°F oven for about ten minutes, depending on the thickness of the fish.

When the fish is flaky, raise pan to broiler level and switch control to "broil" until bread crumbs turn black (about 3-5 minutes, no need to turn fish over).

Poster's Notes:
I have a De Longhi toaster-oven, broiler. Made this in that machine and it is even easier than the oven and can be watched through the window. I also made it with salmon fillets and it is just as good.
