Gefilte Fish Terrine, Tri-Color I (P, KLP, TNT)

1 loaf gefilte fish defrosted
5 carrots, peeled and sliced
1 box frozen chopped spinach

Boil carrots until tender. Drain and mash well.

Divide fish into three with one third slightly larger. Place in three separate bowls.

Squeeze excess water from spinach and mix thoroughly with 1/3 of fish. Add mashed carrots to the other bowl and mix well with 1/3 of the fish.

Spray loaf pan generously with vegetable spray. Line bottom of pan with wax paper and spray paper well. Place spinach mixture on bottom of pan and spread level.

Next spread the larger plain portion of fish over spinach and spread evenly.

Finally add carrot mixture and spread evenly. Spray with vegetable spray and place wax paper on top and then cover with foil.

Bake at 350°F for 1 hour. Cool, then place in refrigerator for several hours or overnight.

To serve:
Remove foil and layer of wax paper, run knife around edges. Place serving plate over pan, turn over and shake out gently. Peel off wax paper and slice into 1" slices.
