Gefilte Fish, Southwestern (P, KLP, TNT)

2 medium onions, sliced
2 tbsp. vegetable oil
2 cups canned tomato sauce
1 tsp. sugar
1/2 cup green olives, pitted
1 Serrano pepper, whole
1 bay leaf
Freshly ground pepper, to taste
1/2 cup water
vegetable oil, for frying
6 gefilte fish patties

Sauté the onions slowly in the oil until soft and golden.

Add the tomato sauce, sugar, green olives, Serrano pepper, bay leaf, pepper, and water. Simmer uncovered for about 5 minutes.

Put about 1/4" oil in a medium frying pan and heat. Add the fish patties, fry until golden on both sides.

Drain and add the patties to the sauce. Simmer uncovered, about 10 minutes or until the sauce penetrates the fish.

Serve hot or cold.
