Gefilte Fish Ring (P, KLP, TNT)
Source: From my friend, Debbie Miller
Yields: 2 rings

2 large Spanish onions, chopped
2 carrots, peeled and shredded
2 tbsp. oil
3-1/2 lbs. dore, pike, and whitefish, minced (or your preference)
1 tbsp. salt
1-1/2 tsp. white pepper
4 eggs
6 tbsp. matzo meal
3 tbsp. sugar
1/3 cup ice water
2 tbsp. horseradish
1/3 cup fresh dill

Sauté chopped onions and carrots in oil until softened.

Transfer to mixing bowl and add ALL the other ingredients. Whip with electric mixer to lighten. This makes enough for 2 fish rings.

Divide mixture in half. Put one half in a greased microwave ring mold. Microwave 6-8 minutes on high. Let cool and turn out on plate. Microwave second ring. May be frozen.

This recipe is from my friend, Debbie Miller. It is very easy to prepare in the microwave. She says that the gefilte fish comes out with a hint of pink from the horseradish and looks very pretty presented on a platter garnished with fresh veggies.
