Gefilte Fish Pie, Quickie (P, KLP, TNT)

Serves: 6 to 8

6 pieces canned or bottled gefilte fish, without broth (if the can has 8 pieces, use the whole can)
1 medium onion, cut in quarters
1 large carrot, peeled and coarsely chopped
3 eggs
1 celery stalk, coarsely chopped
1 teaspoon sugar
4 tablespoons of liquid vegetable oil
1/2 teaspoon pepper
1/4 cup matzo meal
Lettuce

Mash gefilte fish in a bowl. Combine remaining ingredients except lettuce in a food processor. Blend thoroughly. Add to the fish.

Grease a deep 9" pie pan. Pour mixture into pan. Bake uncovered, in preheated 350°F oven for 1 hour. Cool thoroughly, then chill. Cut into wedges. Serve on a bed of lettuce. Garnish with tomatoes and cucumber slices. Serve with horseradish.

The fish pie can be used as an appetizer or entree.
