Gefilte Fish Loaf, Tomato-Basil I (P, KLP, TNT)

Serves: Approximately 8, depending on how thick you slice the fish loaf

2 ounces sun-dried tomatoes
2 tbsp. olive oil
8 large onions, peeled and sliced
2 logs frozen gefilte fish
1 8-ounce bottle of tomato basil salad dressing

Rehydrate sun-dried tomatoes by covering with boiling water for about 5 minutes and set aside.

Heat olive oil and gently sauté onions until translucent, about 10 minutes.

Meanwhile heat oven to 350°F.

Spoon half the onions into the bottom of 2 loaf pans (or one baking pan that can hold both loaves). UNWRAP the fish loaves and place fish on top of the onions. Add 1/2 bottle of dressing to each pan. Put tomatoes on top of the loaves. Spoon remaining onions into pans on sides of the loaves. Bake for 1/2 hour. Cover with foil and bake another 45 minutes. Cool and refrigerate.

Serve at room temperature.
