Gefilte Fish, Fried I (P, KLP, TNT)
Source: My Mother-in-Law Minna
Yield: I make 2kgs (about 4-1/2 lbs.), and that makes about 60 balls

1kg (2.2 lbs.) minced fish
1 dessertspoon EACH salt and sugar
1 onion, grated
1 large carrot, grated
2 eggs
Minna says 'a drop of iced water' (about 1/2 cup)
Fine matzo meal to bind...again, sorry. Do not have exact measurement, but add gradually so that mixture is not too sticky

Mold into balls with wet hands and deep fry in hot oil. (I use an electric deep fryer so that temperature is properly regulated). Give basket a shake so they don't stick to the bottom and colour evenly. I put them into an empty egg carton to drain.

My ex-mother-in-law, who I love dearly, makes these and I have followed the tradition. Everyone loves them...especially the children.
