1 medium onion chopped
Sauté onion and garlic about 5 minutes in oil browning lightly. Add tomato and juice and simmer 15 minutes.
Add fish and cool 20 to 30 minutes. Great served over pasta.

2 tablespoons parsley (or other spices)
1/4 cup tomato juice
4 medium tomatoes chopped, or use 1 can of tomato (crushed or whole and cut up)
1 to 2 lb. of fish in bite size pieces (firmer fishes work better such as scrod, snapper, salmon, cod, or tuna)
