Fish Fillets, Baked II (D, KLP, TNT)

Serves: 2 to 3

1 cup (approximately) cereal crumbs, OR bread crumbs OR matzo meal
1/4 cup milk
1 to 1-1/2 lbs. fish fillets
Pinch of cayenne (optional)
5 teaspoons olive oil

Heat oven to 500°F. Use cooking spray on pan (I also line the pan first with aluminum foil as it makes cleanup very easy), and then prepare fish.

Mix crumbs with pepper (and cayenne or some appropriate fish spice). Dip each fillet in milk and then roll in crumbs. Put fillets in sprayed pan and drizzle olive oil over them. (Doesn't need to be completely covered with oil)

Bake 12 to 15 minutes. Enjoy.
