5 to 6 pieces of filets of sole
Place diced onions on the bottom of a pot. Sprinkle with seasonings. Shake the pot to distribute the seasonings.
On each fish filet place a piece of the salmon filet. Roll up and secure with a toothpick. Place on top of onions. Cook on low heat for about 10 minutes. The fish will sweat and provide the liquid. Serve the fish on a bed of lettuce. Spoon the onions over the fish as a sauce.

Large onion, diced
Salt, white pepper or lemon pepper, and paprika to taste
This recipe is easily multiplied. Makes a very nice appetizer by itself or main course served with rice.
