Fish fillet (I use salmon)
Place fish into baking pan. Put spices, a lot of fresh red pepper slices, a lot of garlic, not "too much" cilantro, sliced olives or okra. (My Spanish friend uses okra;, does that make it Spanish fish?) Pour generous amount of olive oil over top.
Cover pan with aluminum; bake in a 220°F oven for an hour, keeping covered.

I've found that even though salmon is an 'oily ' fish; the addition of the oil to the pan does make a difference in the outcome.
