1 cup plain mashed potatoes
Sauté the onion, red and green pepper and celery in the butter until tender, but not browned. Fold in the fish and mix in the rest of the ingredients.
Make into patties and coat with dry bread crumbs. Let sit in the refrigerator, covered with wax paper, at least an hour for the bread crumbs to coat and the patties to firm up.
Lightly grease a cookie pan and bake the patties at 400°F for 15 minutes. Turn and bake another 15 minutes, or until golden brown. Alternatively, you can fry them in a little oil.
I served them with some tarter sauce (bottled), a salad and some fresh asparagus. It was a nice summer dinner!!

I got the recipe from my files. I don't remember who it came from originally, but this was the first time I made them. I will make them again. They would be good with leftover baked fish and left over mashed potatoes.
I changed the recipe a bit. I added 1 egg and only a bit of milk (maybe a tablespoon or 2 - I thought the egg was needed to hold the patties together, but I can't say since I have never tried it without the egg!!!).

We had these for supper last night. I baked them all and froze some. I have frozen salmon croquettes in the past and these seem like they will freeze well, also.
