1 lb. fish fillets
Mix egg and water well in a wide shallow bowl.
On a sheet of waxed paper, mix together matzo meal and seasonings.
Rinse fish fillets and pat dry. Dip fish in egg mixture, allow to drip over bowl until most of dripping stops. Then coat fish with matzo mix on both sides. Set on another piece of waxed paper. Continue until all fillets are coated once.
Repeat egg and coating steps one more time.
Place fillets in buttered baking dish, and bake until golden, turning once.
