Fish Croquettes I (P, KLP, TNT)

1 can tuna or salmon, (drained)
1 small onion
1 egg
Matzo meal

In the food processor, with steel blade, I process the onion to a fine chop.

Add the tuna and the egg. Remove from the processor bowl to another bowl.

Add matzo meal--enough to hold the shape of a patty. Do not add too much matzo meal. Too much and it will be a matzo meal latke.

Occasionally I add carrot or zucchini to the processor mixture.

Poster's Notes:
Tuna or salmon croquettes are a big favorite in my house. Salmon definitely has more taste than tuna. To make it more flavorful, I serve the croquettes with cucumber dill sauce or horseradish sauce.
