Croquettes, Salmon-Grapefruit (P, TNT)

Croquettes:
1 small onion
1 small can salmon
1 egg
1/4 grapefruit, all membrane removed
Flour as needed (I use whole wheat flour)

Sauce:
2 tablespoons mayonnaise (I use tofu mayo)
1/4 grapefruit, all membrane removed
Curry to taste
Pinch of Stevia (or your own sweetening option to taste)

Heat oil in a skillet (I use a cast iron skillet). Chop onion in food processor, add fish, egg, and grapefruit and process until well-blended. Add flour for thickening and binding for shaping. Shape into patties and fry.

Clean out processor and blend ingredients for sauce. Pour sauce over patties once plated.
