Cod Cakes and Mustard Sauce (P, TNT)
Source: Unknown
Serves: 4

1/2 cup mayonnaise (I use lowfat)
4 tsp. Dijon mustard (I have substituted honey mustard as well, with good results)
1-1/2 lbs cod fillet (any firm flesh fish can be used, such as scrod, flounder)
2 eggs
1/2 cup dry bread crumbs
Salt and pepper
2 tsp. chopped parsley
1 tbsp. fresh lemon juice
1/4 cup oil

Combine the mayonnaise and mustard. Set aside.

Remove any bones from cod and cut the fish into approximately 1" pieces. Puree the fish in food processor until almost fluffy.

In a mixing bowl, beat the eggs. Add the bread crumbs, 1 tsp. salt, 1/4 tsp. pepper, parsley and lemon juice. Gently fold in the fish. form mixture into 8 patties.

Heat the oil in large frying pan over medium-high heat. Cook patties until they're golden brown, 3 to 4 minutes per side. serve hot with the mayonnaise-mustard sauce.

Poster's Notes:
This recipe has been a longtime favorite in our family . While I don't know if it tastes like crab cakes, it may be similar to it.
