2 cups brown rice, cooked, HOT
Place rice in serving or mixing bowl.
Put coconut milk in saucepan and heat over medium heat to almost boiling.
Taste, add sugar if needed or desired.
Stir in vanilla and shredded coconut, reduce heat and simmer five minutes.
Meanwhile, add chocolate chips to rice and stir until they are completely melted and combined thoroughly with rice.
Remove coconut milk from heat and pour slowly over rice, mixing thoroughly.
Allow to cool.
Serve chilled with whipped cream, vanilla yogurt, or sweetened almond or soy milk if desired.

1 or 2 tsp. sugar
1 cup sweetened shredded coconut
1 tsp. vanilla extract
1 cup semi-sweet chocolate chips
Sweetened whipped cream, or vanilla yogurt, or sweetened almond or soy milk, if desired
Additional chips or coconut shreds if desired for garnish
Could probably use white rice, instead of brown.
