Remove crusts from bread; cut into small cubes. Add sugar. lemon rind and juice.
Heat milk almost to boiling and beat with egg yolks. Add to bread cubes.
Pour the mixture into lightly greased baking dish. Bake in a preheated 350°F hot oven for 45 minutes.
Cool slightly. Prepare the meringue. Beat egg whites until stiff; folding in the castor sugar.
Spread the jam on top of the pudding and top the meringue over. Return to the oven for another 15 minutes or until meringue is slightly golden and crisp.
