7-8 cups freshly grated pumpkins, cut into matches sticks
1/2 cup brown sugar
2 large eggs
1/4 cup cream
1/4 cup milk
OR use just milk
1 cup crushed walnuts
1 cup brown raisins
1/2 cup ground oats
1/8 teaspoon allspice
1/2 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon salt
1/2 cup melted butter
In a big bowl mix real well every thing except the pumpkin, ground oats and melted butter. Add the pumpkin, mix really well. Then add the oats and butter, again mix well.
Butter or spray with non-stick cooking spray a rectangle 20/26 cm Pyrex dish ,and scoop all into it. Don't worry if it fills up to the top of the dish, during the baking it will shrink.
Cover with aluminium foil and bake in pre-heated 375°F oven for 30 minutes.
Uncover. Pour the melted butter evenly over and continue to bake in reduced heat 325°F for another 30 minutes.
Serve warm. It is delicious.
