Pudding, Date Cake (D, TNT)

Yield: 1-1/2 quart casserole

Pudding:
1
cup dates, diced
2 tbsp. butter
1 cup boiling water
1 egg, lightly beaten
1/2 cup sugar
1/2 cup brown sugar
1-1/2 cups flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup chopped nuts

Topping:
1-1/2 cups brown sugar
1-1/2 cups boiling water

Preheat oven to 350°F.

Add butter to boiling water and stir to melt. Pour the water/butter over the dates. Stir to soften the dates. Cool.

Mix into the date mixture the egg and sugars. Sift together the dry ingredients and stir into the date mixture. Add nuts.

Pour batter into a lightly greased 1-1/2 quart casserole. Smooth out the batter and sprinkle the brown sugar on top. Slowly pour the boiling water over all. Do not stir. Bake the pudding 40 minutes.

Poster's Notes:
This one makes a sauce as the cake bakes. I use an extra 1/2 cup boiling water for the sauce so it isn't quite as sweet.
