Blancmange (Cornstarch Pudding) I (D, TNT)

Serves: 5

3 tablespoons cornstarch
4 tablespoons sugar
1/8 teaspoon salt
2 cups milk (1/2 liter)
1 teaspoon vanilla

Mix cornstarch, sugar, and salt with 1/4 cup cold milk.

Heat the remaining milk, then slowly add it to the cornstarch mixture, stirring constantly. Cook until thickened, stirring constantly, in a heavy-bottomed pan over moderately low heat or in a double boiler over simmering water. Continue to cook for about 15 minutes so that the raw taste of the cornstarch disappears.

Let cool, then add vanilla. Cover and chill.

Chocolate Blancmange:
When you heat the milk, add 2 ounces (4 tablespoons) unsweetened chocolate and stir until smooth.

Poster's Notes:
I made this one once after reading the ingredients on a package of instant pudding. It's actually a recipe for vanilla pudding, but I just kept adding cocoa powder until it was the way I like it.
