"Jello" Mold, Orange Lime (D/P, KLP, TNT)

Serves: 6

3 cups freshly squeezed orange juice
1/4 freshly squeezed lime juice
About 1/3 cup sugar
2 envelopes unflavored gelatin
Sweetened whipped cream (the recipe says this is optional but not in my house)

Place a fine strainer over a medium, noncorrodible saucepan (I use glass). Pour the orange and lime juices through it pushing on the pulp with the back of a spoon to press out as much juice as possible. Discard the pulp.

Stir in 1/3 cup sugar and 1/2 cup cold water. Sprinkle on the gelatin and let stand until softened, about 5 minutes.

Place the pan over low heat and stir until the sugar and gelatin have dissolved. Bring to a simmer, stirring occasionally. Remove from heat and taste for sweetness; if too tart add a bit more sugar to taste. Let cool to room temperature.

Pour into a serving bowl, cover and refrigerate until set, 12 hours or overnight. Serve in stemmed glasses and top with whipped cream.

This is my favorite orange dessert. Make this a day or two before you need it.
