Sherbet, Rockmelon and Banana (P, KLP, TNT)

Serves: 8 or more

6 eggs, separated
1 cup sugar
1/2 cup oil
1 medium-size rockmelon (cantaloupe)
1 ripe banana

In a bowl beat together egg yolks, 1/2 cup sugar, and oil with an electric beater for half an hour.

Puree fruit and add to egg mixture.

In a separate bowl beat egg whites and remaining sugar until stiff. Gently fold whites into fruit mixture.

Pour into ice cream tray and freeze.

Suggestions: Other fruits to use: strawberries, raspberries, kiwi fruit, blueberries, passionfruit, mangoes. Make alternate layers of different fruit flavoured ice cream and decorate with pureed fruit.
