Sherbet, Peach (P, TNT)

Yield: approximately 1/2 gallon

2 quarts peaches
2-1/2 cups sugar
1/2 tsp. salt
1-1/2 quarts liquid non-dairy coffee creamer
1 tsp. vanilla extract

Slice peaches. Add sugar to peaches and let sit for an hour.

Puree the sweetened peaches. Pour the puree into ice cream freezer. Mix liquid creamer, vanilla, and salt together.

Pour into ice cream freezer and freeze according to the manufacturer's instructions.

Poster's Notes:
This ice cream is great for those watching their cholesterol or are lactose intolerant. I entered this at the State Fair here and took a ribbon home for it. The judges were amazed that ice cream can taste great and still be good for you. One of the judges said the recipe looked awful but the ice cream was just the opposite.
