Ice Cream, 15 Minute Fruit (D/P, KLP, TNT)

Serves: 6-8

500g (1 pound) preserved fruit without pervasion fluids (e.g. apricot)
1 cup sugar
1 egg white
2 tablespoons liquor
250ml (1 cup) whipping cream, or non-dairy cream

Put the fruit, sugar & egg white in the food processor. Take the cap off the lid; you need to give the mix enough air. Mix for 10 seconds. Add the liquor.

Beat the cream to stiff peaks. Fold into the fruit mix. Freeze for 4 hours. Take out of refrigerator 20 minutes before serving.
