Crisp, Passover Apple (D, KLP, TNT)

5 medium Granny Smith apples (1-1/2 pounds)
5/6 cup sugar, divided into 1/2 cup and 1/3 cup
1 tsp. ground cinnamon
2 tsp. lemon juice
Vegetable cooking spray
1/2 cup unsalted matzo meal
1/4 cup almonds, sliced
2 tbsp. margarine, melted
1/8 tsp. salt

Peel, core, and cut the apples into 1/4" slices.

Combine apple slices, 1/2 cup sugar, cinnamon, and lemon juice, and toss gently. Spoon into an 11"x7" baking dish coated with cooking spray; set aside.

Combine the matzo meal, 1/3 cup sugar, almonds, margarine, and salt, and stir well. Sprinkle over apple mixture.

Bake at 350°F for 1 hour or until browned.
