Preheat over to 325°F.
Make Filling:
Combine sugar, brown sugar, lemon peel, cinnamon and coriander. Sprinkle over apples. Mix well with your hands. Combine water/cider and lemon juice. Sprinkle mixture over apples.
Make Topping and Assembly:
Bake for 55 to 60 minutes until mixture is golden brown and bubbles up in the center.
Serve warm with cream, whipped topping or ice cream.

5 medium apples
1/2 cup sugar
1/2 cup brown sugar
1 tsp. grated lemon peel
1/2 tsp. cinnamon
1/2 tsp. coriander (optional)
2 tbsp. water or cider
1 tbsp. lemon juice
1 cup flour
1/2 cup sugar
1 tsp. salt
1 cup shredded sharp Cheddar
1/2 cup butter
Peel, core and slice apples. Place apples into buttered 8"x8" baking dish.
In medium bowl (or food processor) combine ingredients for topping. Mix until crumbly. Put topping over apples, patting down with your hands.
This recipe tastes good with any eating apple. You can also use a mixture of apples if that is what is on hand.
