Cobbler, Blackberry (D, TNT)

Serves: 8

2 cups granulated sugar, divided
1/3 cup butter
2 cups flour
2 tsp. baking powder
1 tsp. salt
1 cup milk
1 tsp. vanilla flavoring
A few grates of fresh nutmeg (1/8 tsp.)
2 cups blackberries
2 cups boiling water

Cream 1 cup sugar with butter; add flour, baking powder, salt, and milk; mix well.

Pour into 12"x8"x2" baking pan. Pour blackberries over batter. Sprinkle remaining sugar over berries. Pour boiling water over top.

Bake at 350°F for 50 minutes or until golden brown. Serve plain or with cream.

Poster's Notes:
I generally omit the salt.

I have also made this over a campfire in a "Dutch oven," using a round cake pan on a rack and homemade vanilla-flavored sugar. The recipe is fairly forgiving.
