Cheesecake, Low-Carb II (D, TNT)

Serves: 6 to 8

2 packages cream cheese, softened
2 eggs
1/3 cup Splenda
2 tablespoons vanilla
Juice of 1/2 lemon

Preheat oven to 400°F.

Combine all ingredients until smooth and creamy. Transfer mixture into a pie dish. Smooth to an even surface.

Bake about 1/2 hour to 45 minutes until surface begins to brown. Cool overnight.

Poster's Notes:
I actually would tweak it even more and use more vanilla and less lemon......but you could also add unsweetened cocoa...
